Mellow — Engineering the second version of a sous-vide appliance

Mellow builds a countertop sous-vide appliance. For its second version, they needed to clear FDA approval — which meant the cooling system had to do more than the first version's did, to keep food safely chilled.

We took on the engineering challenge end to end: dimensioning a cooling system that met the food-safety requirement, validating it in practice, and defining the requirements for the next version.

    Challenge

    Mellow's first version didn't cool food fast or consistently enough to clear FDA approval for food safety — a hard requirement for the second version.

    Engineering the cooling system

    We dimensioned a cooling system sized for the food-safety requirement, then validated it in practice rather than on paper alone.
